Authentic Jamaican jerk pork

Prep: 15 mins | Marinate: 4+ hrs | Cook: 1.5 hrs | Yield: 4–6 servings.

Ingredients

3–4 lbs Pork shoulder, cut into 2-inch chunks
1 Lime (for cleaning) & 1 tbsp oil
2–3 tbsp Jerk Seasoning Blend
1 cup Jerk BBQ Sauce
Sliced green onions (for garnish)

Instructions

1. Prep & Spice: Clean pork with lime, dry, and score deep slits. Rub with oil and massage Jerk Seasoning Blend into every fold. Marinate 4+ hours (or overnight).

2. Low & Slow: Cook over indirect grill heat (250°F–275°F) for 1.5 hours until tender. Move over high heat at the end for a deep char.

3. Signature Finish: Brush generously with Jerk BBQ Sauce in the last 5 minutes to caramelize into a glossy glaze.

4. Chop, top with green onions, and serve with mac & cheese, plantains, and slaw!
