Jerk Chicken

Smoky, spicy, and perfectly balanced with authentic Jamaican island flavor.

Ingredients

• 4 chicken leg quarters
• 2 tbsp Island Spice Jerk Seasoning
• 2 tbsp olive oil
• 1 tbsp fresh thyme
• 3 cloves garlic, minced
• 1 scotch bonnet pepper (optional)
• 1 tbsp brown sugar
• 1 tbsp soy sauce
• Juice of 1 lime

Instructions

1. In a bowl, combine jerk seasoning, olive oil, thyme, garlic, sugar, soy sauce, and lime juice.

2. Rub the marinade thoroughly over the chicken. Cover and refrigerate for at least 4 hours (overnight preferred).

3. Preheat grill to medium heat. Grill chicken for 35–45 minutes, turning occasionally, until fully cooked.

4. Allow chicken to rest for 5 minutes before serving.5. Serve with rice and peas or fried plantains.
